CREAMY DHAL

A rich and creamy daal, extremely tasty and rich in protein and nutrients.
Ingredients (2 servings)

1 tbsp Coconut Oil

1 white Onion, diced

3 Cloves of garlic

1 tsp of fresh grated Ginger

1 cup Red Lentils
-
400 mls of Coconut Milk
-
400 mls of Water
-
1 tsp of Turmeric
-
1 tsp of Cumin
-
1 tsp of Curry Powder
-
Chili Flakes
-
¼ tsp Sea Salt
-
Fresh ground Black Pepper ​

Preparation

Heat the oil over medium heat in a large pot on the stove.

Add diced onion and garlic and sauté for 5 minutes, or until soft.

Stir in grated ginger, red lentils, coconut milk, water, spices, sea salt, and a few grinds of black pepper.

Bring mixture to a boil, cover, reduce heat to a simmer and cook for 15-25 minutes, stirring every so often.

The daal is done when lentils have expanded and thickened and daal is creamy.

Serve the daal with rice or homemade chapatis.
