MANGO & COCONUT BALLS

A delicious, healthy, sweet and nutrient dense snack! Easy to make and so refreshing.

 

Ingredients 

  • 100g of Dried Mango

  • 1/4 cup of Desiccated Coconut

  • 1/4 cup of Macadamia nuts

  • 1 tablespoon of Coconut Oil

  • 1/2 a teaspoon of Vanilla extract

  • Zest of half a Lime

  • Pinch of salt

  • 1/2 a tablespoon of Flour (I used Corn flour)

  • 1/2 a tablespoon of Ground Almonds

Method 

Soak the mango in water for a couple of hours.

Drain the mango and place it as well as all the other ingredients (except the flour and ground almonds) in a food processor and blend until combined.

As the mixture is quite sticky, roll into the flour and ground almonds to absorb this excess of stickiness and give them a better texture.

Shape them into balls, and roll into desiccated coconut. Then I advise you to store them in the fridge for at least 2 hours to let them harden a bit before consuming.
