MATCHA & RASPBERRY ENERGY BALLS

Matcha's unique taste may be surprising but is literally amazing. The chlorophyll and amino acids give an initial vegetal and sharp taste, followed by a nice sweetness. Matcha’s health benefits are super potent and numerous.

These energy bites are ideal as a healthy snack, packed with nutrients and antioxidants.

 

Ingredients (makes 10)

  •  1 teaspoon of Matcha powder

  • 2 tablespoons of Nuts Butter (any)

  • 100g Almonds

  • 50g Pistachios 

  • 4 Dates, de-stoned and soaked in hot water for 15 mins

  • 2 tablespoons of desiccated Coconut

  • 10 frozen Raspberries

 

Method

Put all the ingredients in a blender and process until finely chopped.

Using a heaped spoon, or a scoop, take a portion of the paste in the palm of your clean and dry hands. Then take a raspberry and cover it with another spoonful of the mixture. You will find this step gets very messy, I found it easier to do it over a big container to be able to recover some of the bits! Don’t hesitate to firmly press the paste into your palm for a few seconds in order to form the ball.

Optionally, coat some of the formed balls with more matcha. Place them all in a lidded container and refrigerate for at least 15 minutes.
