QUINOA 

SALAD

Ingredients (serves 5) 

  • 1 cup of Quinoa

  • 1/4 cup of extra virgin Olive oil

  • Juice of 2 Limes

  • 1 1/2 cup (220g) of Cherry tomatoes, cut in half

  • 1 Pepper (ideally red, orange or yellow, or a mix!)

  • 2 teaspoons of ground Cumin

  • 1 teaspoon of Salt

  • Half a Red onion

  • 1 handful of Pine nuts

  • 4 leaves of chopped Mint

  • 1 tablespoon of Chia seeds (optional)

  • 1 handful of Nuts (optional)

  • Pepper and salt to taste

Method

Bring half a litre of water to boil in a saucepan, then add the quinoa and reduce the heat to medium-low. Simmer until the quinoa is tender, for 10-15 minutes. Set aside to cool.

Whisk the olive oil, lime juice, cumin, and salt together in a small bowl.

Once the quinoa is cooled, combine it in a big bowl with the peppers, tomatoes, and red onion. Pour the dressing over and toss, then stir in the mint, black pepper and more salt if needed, and additionally add in some nuts and chia seeds!

Serve immediately or let it to chill in your fridge.
