SPICY MEXICAN BLACK BEAN SOUP

Ingredients

  • 2 cans (400g each) of black beans

  • 2  garlic cloves 

  • 1 can of chopped tomatoes

  • 1 tablespoon of cumin

  • 1 teaspoon of chipotle flakes

  • 1 teaspoon of ancho chili flakes

  • Vegetable stock

  • Salt and pepper to taste

  • 1 lime

  • 2 avocados

Method

  1. Cook the garlic and spices in olive oil​

  2. Add the rinsed and drained beans and can of chopped tomatoes

  3. Add vegetable stock and boiled water

  4. Blend all together

  5. Add salt and pepper to taste

  6. Garnish with a homemade guacamole (see our homemade guacamole recipe here) on top and serve with tortilla crisps
