SPICY MEXICAN BLACK BEAN SOUP

Ingredients

2 cans (400g each) of black beans
-
2 garlic cloves
-
1 can of chopped tomatoes
-
1 tablespoon of cumin
-
1 teaspoon of chipotle flakes
-
1 teaspoon of ancho chili flakes
-
Vegetable stock
-
Salt and pepper to taste
-
1 lime
-
2 avocados

Method
-
Cook the garlic and spices in olive oil​
-
Add the rinsed and drained beans and can of chopped tomatoes
-
Add vegetable stock and boiled water
-
Blend all together
-
Add salt and pepper to taste
-
Garnish with a homemade guacamole (see our homemade guacamole recipe here) on top and serve with tortilla crisps
