BURRITO BALLS

Ingredients (around 12 balls)

  • 1 tbsp Coconut Oil

  • 1 small chopped Onion

  • 2 Garlic cloves, finely chopped

  • 2 tsp of Cumin Seeds

  • 2 Red Chilies, finely chopped

  • 400g Black Beans, ready to eat

  • Some Linseed

  • Lime

  • Vegan Sour Cream  

  • Brown Rice, roasted Cashews, Cherry Tomatoes, Edamame beans, Roasted Veg are some garnish ideas!

Method

1. Preheat the oven at 200 degree Celsius. Place a baking sheet onto a baking tray

2. Heat the oil in a pan with medium heat. Add the onion slices and cook until tender. Add the garlic, cumin and cook for another 2 mins. Add the beans and stir from time to time.

3. Place the mix in an electric blender (I use Nutribullet) and blend until roughly mixed. Season to taste, then assemble into balls.

4. Coat the balls with linseed and place them onto the baking tray. Bake in the oven for 15 minutes.

5. Let the balls cool down onto the baking tray so they harden before eating. You can keep them up to a week in the fridge in a sealed container.

Simple and delicious!
